Today I went on the excellent seminar on wheels at the NAE 4-HA National Conference to visit the Culinary Arts School at Delgado Community College.  It was a great experience, and we had an excellent presentation by the chef.  He taught us about the difference between Cajun and Creole food.  He also taught us how to shuck oysters and how to prepare some excellent recipes such as Crawfish Monica and Bananas Foster.  Here are some photos of this fun event:
